Banana Peanut Butter Cookies

I love me some peanut butter cookies and they’re even better with a cold glass of milk…yum!

This week I tested out some peanut butter cookies but added some bananas into the mix. 

The players:

  • 2 ripe bananas
  • 1 ¾ cups whole wheat pastry flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup peanut butter
  • 1 cup honey
  • ¼ cup butter, softened
  • 1 egg, beaten
  • 1 ½ tsp vanilla extract

Pre-heat oven to 350° F. Mix the dry ingredients (flour, baking soda, salt) together in a large bowl.


Put bananas in a separate bowl, breaking into smaller pieces.

Add the peanut butter, honey, butter, egg and vanilla extract to the bananas and mash everything up. Leave small chunks of bananas. Tip: Start mashing with a fork then get a spatula to mix. Stir in the dry mix.

This is what it should look like when all mixed together.

scoop and flatten

Scoop out small balls of the batter (I use an small ice cream scoop) on to a non-stick surface and place about 1″ apart.  Then take a fork and do a criss-cross pattern with it. Tip: grease the fork with a little butter to prevent it from sticking to the dough.

Bake for about 12-15 minutes or until golden brown.

  • 1 ¾ cups cups whole wheat flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup peanut butter
  • 1 cup honey
  • ¼ cup butter softened

  1. Preheat oven to 350° F.
  2. Whisk flour, baking soda, and salt in a large bowl.
  3. In a separate bowl, put bananas, peanut butter, honey, softened butter, egg and vanilla extract together. Mash ingredients until well-mixed and bananas are in small pieces (start with a fork to mash.)
  4. Stir in dry mix to the banana mixture. Mix until combined.
  5. Scoop dough with a table spoon or ice cream scoop and place about 1" apart on a lined baking sheet.
  6. Bake for 12-15 minutes or until golden brown.
